Vegan Chocolate Avocado Cupcakes Recipe

Ingredients:

For the Cupcakes:

1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 ripe avocado, mashed
1 cup unsweetened almond milk (or any plant-based milk)
3/4 cup granulated sugar
1/4 cup unsweetened applesauce
1 teaspoon vanilla extract

 

For the Chocolate Avocado Frosting:

2 ripe avocados, mashed
1/2 cup unsweetened cocoa powder
1/4 cup maple syrup (or more to taste)
1 teaspoon vanilla extract
A pinch of salt

 

Instructions:

For the Cupcakes:

Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.

In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.

In a separate bowl, combine the mashed avocado, almond milk, granulated sugar, applesauce, and vanilla extract. Mix until smooth.

Gradually add the dry ingredients to the wet ingredients and stir until just combined. Be careful not to overmix.

Divide the cupcake batter evenly among the liners, filling each about 2/3 full.

Bake for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Allow the cupcakes to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely.

 

For the Chocolate Avocado Frosting:

In a bowl, combine the mashed avocados, cocoa powder, maple syrup, vanilla extract, and a pinch of salt.

Using a hand mixer or a food processor, blend the ingredients until the frosting is smooth and well combined. Taste and adjust the sweetness with more maple syrup if desired.

 

Assembly:

Once the cupcakes are completely cool, pipe or spread the Chocolate Avocado Frosting on top of the cupcakes using your preferred decorating tip.

Optionally, garnish with vegan chocolate chips, cocoa powder, or fresh berries for a delightful finishing touch.
