Galaxy Mirror Glaze Cupcakes Recipe

Ingredients:

For the Cupcakes:

1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
1/2 cup whole milk

 

For the Galaxy Mirror Glaze:

2 envelopes (14 grams) unflavored gelatin
1/2 cup cold water
1 cup granulated sugar
2/3 cup sweetened condensed milk
1 1/2 cups white chocolate chips
Gel food coloring in assorted galaxy colors (e.g., deep blue, purple, black)
Edible silver or gold star sprinkles (optional)

 

Instructions:

For the Cupcakes:

Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.

In a bowl, whisk together the flour, baking powder, and salt. Set aside.

In another bowl, using an electric mixer, beat the softened butter and granulated sugar until the mixture is light and fluffy.

Beat in the eggs, one at a time, followed by the vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Stir in the whole milk until the batter is smooth.

Divide the cupcake batter evenly among the liners, filling each about 2/3 full.

Bake for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Allow them to cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

 

For the Galaxy Mirror Glaze:

In a small bowl, sprinkle the unflavored gelatin over cold water and let it sit for about 5 minutes to bloom.

In a saucepan, combine the granulated sugar and sweetened condensed milk. Heat the mixture over low heat, stirring until the sugar is fully dissolved.

Add the white chocolate chips to the saucepan and stir until they are completely melted and the mixture is smooth.

Remove the saucepan from the heat and add the bloomed gelatin. Stir until the gelatin is completely dissolved into the mixture.

Divide the glaze into several small bowls and tint each portion with different galaxy colors using gel food coloring. Swirl the colors together for a marbled effect.

Allow the glaze to cool to about 90-95°F (32-35°C) before pouring it over the cupcakes.

 

Assembly:

Place your cooled cupcakes on a wire rack with a tray or parchment paper underneath to catch the excess glaze.

Pour the galaxy mirror glaze over each cupcake, allowing it to naturally drip down the sides for a cosmic effect.

Optionally, sprinkle with edible silver or gold star sprinkles for a stellar touch.
