Ingredients:
For the Cupcakes:
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
1/2 cup whole milk
1/2 cup dried figs, finely chopped
For the Goat Cheese Frosting:
8 oz goat cheese, softened
1/4 cup unsalted butter, softened
2 cups powdered sugar
1 teaspoon pure vanilla extract
For the Fig Compote:
1 cup dried figs, chopped
1/2 cup water
2 tablespoons honey
1 teaspoon lemon zest
2 tablespoons lemon juice
Instructions:
For the Cupcakes:
Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
In a bowl, whisk together the flour, baking powder, and salt. Set aside.
In another bowl, using an electric mixer, beat the softened butter and granulated sugar until the mixture is light and fluffy.
Beat in the eggs, one at a time, followed by the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined.
Gently fold in the finely chopped dried figs.
Divide the cupcake batter evenly among the liners, filling each about 2/3 full.
Bake for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Allow them to cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
For the Fig Compote:
In a saucepan, combine the chopped dried figs, water, honey, lemon zest, and lemon juice. Simmer over low heat for about 10 minutes, or until the figs soften and the mixture thickens. Remove from heat and let it cool.
For the Goat Cheese Frosting:
In a bowl, beat the softened goat cheese and butter until creamy.
Gradually add the powdered sugar and vanilla extract. Beat until the frosting is smooth and fluffy.
Assembly:
Once the cupcakes are completely cool, pipe or spread the Goat Cheese Frosting on top of the cupcakes using your preferred decorating tip.
Spoon a small amount of the Fig Compote onto each cupcake.
Optionally, garnish with a small piece of dried fig or a sprig of fresh rosemary for a sophisticated and elegant presentation.
These Fig and Goat Cheese Cupcakes offer a delightful blend of sweet and savory flavors. The fig compote adds a fruity sweetness that pairs beautifully with the creamy and tangy goat cheese frosting. Enjoy the unique and sophisticated taste in every bite!
