Caramel Apple Cupcakes Recipe

Ingredients:

For the Cupcakes:

1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
1/2 cup unsweetened applesauce
1/2 cup finely chopped apples (peeled and cored)
1/4 cup chopped pecans (optional)

 

For the Caramel Frosting:

1/2 cup unsalted butter
1 cup packed light brown sugar
1/4 cup whole milk
2 cups powdered sugar
1 teaspoon pure vanilla extract
A pinch of salt

 

Instructions:

For the Cupcakes:

Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.

In a bowl, whisk together the flour, baking powder, baking soda, salt, and the ground spices (cinnamon, nutmeg, cloves). Set aside.

In another bowl, using an electric mixer, beat the softened butter and granulated sugar until the mixture is light and fluffy.

Beat in the eggs, one at a time, followed by the vanilla extract.

Mix in the unsweetened applesauce.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Gently fold in the chopped apples and chopped pecans (if using).

Divide the cupcake batter evenly among the liners, filling each about 2/3 full.

Bake for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Allow them to cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

 

For the Caramel Frosting:

In a saucepan over medium heat, melt the butter.

Stir in the packed brown sugar and milk. Bring the mixture to a boil and cook for about 2 minutes, stirring constantly.

Remove from heat and let it cool for a few minutes.

Gradually whisk in the powdered sugar, vanilla extract, and a pinch of salt until the frosting is smooth and thick.

 

Assembly:

Once the cupcakes and caramel frosting have cooled, generously frost the cupcakes with the Caramel Frosting.

Optionally, drizzle each cupcake with a little extra caramel sauce and garnish with apple slices, pecans, or a dusting of cinnamon for a decadent and visually appealing finish.
